Snacks...... lets talk healthy snacks

Not quite a snack as such, but a new recipe this evening, that makes a great meal, or can be left to go cold as a really tasty snack…

Grated a couple of courgettes, and squeezed them fairly dry, then fried up, fat free, with a couple of thinly sliced red onions and a chopped chilli. Then lined the base of a quiche dish with it (no pastry) layered on a small amount of cottage cheese, seasoned, and finally topped with a mix of beaten eggs, skimmed milk and a handful of finely chopped mint, and baked for 30 mins…

Bloody lovely!
